Simply Cook Recipe: Mexican Tinga

While scrolling through Instagram I came across the food subscription service Simply Cook and decided to test it out. I don't really go for food subscription services as one of my favorite 'past times' is to go supermarket shopping, however this one intrigued me as you are only sent the spices for the recipes. I still get to do the food shopping myself, as well as take as long as I want to cook the recipe, since there are no perishable ingredients with their ticking clocks included.


One of the first recipes I cooked was the Churrasco Halloumi Burger. It was divine - and I have made the recipe repeatedly even without the spices from Simply Cook.


My next recipe to try out was the Mexican Tinga, and like the halloumi burger, it was not a disappointment. I did make some minor changes though.


I cooked the chicken (first time I bought and cooked chicken since no longer being vegetarian) with the Chipotle Rub and lemon in a pan with olive oil. While that was cooking I mixed sour cream with the Smoky BBQ Paste and sweetcorn. Once the chicken was cooked I added leftover tomato sauce I had in the fridge which needed to be used with the Salsa Paste. Because I needed to use the leftover tomato sauce in my fridge, I didn't do the cherry tomato steps in the given recipe. Then toast your tortilla in the oven, pile on the toppings, add some grated cheese, and voila.


What always stands out to me with Simply Cook recipes is the depth of flavor from the spices. I can really taste the difference. In my little apartment, kitchen space is very limited and being able to create this depth of flavor, without having a fully stocked spice cabinet, is convenient. Overall, I would greatly recommend and order another subscription box.
