Baking is not my strength, but for my birthday I wanted to make brownies.
In my new apartment one of the few items I do have is a brownie tin. What I don't have though is measuring equipment. This has made the 'exact science' of baking a tricky process for me, but I have found a solution: proportions. I used this brownie recipe from the BBC to make the birthday brownies. Instead of measuring using grams and cups, I used a regular coffee cup (it's all I have). Whatever you use, you need to keep consistent and use the same cup throughout the whole process. Below is my amended recipe with the proportion ingredients:
- 3/4 'cups' butter
- 3/4 'cups' chocolate
- 2/3 'cups' flour
- 1 1/4 'cups' sugar
- 1/3 'cups' cocoa
- 1/4 'cups' chocolate pieces to mix into batter
(The recipe from the BBC also calls for white chocolate, but I only used dark chocolate throughout)
To make the brownies I just followed the recipe. I don't have a mechanical whisk, so I whisked by hand as much as I could. A tip if you're whisking by hand is to put the finished batter into the oven as quickly as possible. Those whipped eggs are the only leavening agent in the batter, and if you let it sit on your counter too long you will lose your effort of the whipped eggs.
Overall this recipe, even in my little kitchen with no equipment, creates incredible brownies. These brownies lean towards the fudge side, versus cake like brownies. I brought them into the office for my birthday and they were a great hit, so I highly suggest you give this a try and do your best not to eat them all in one go.
